Spicy Crockpot Chorizo Chili
The gathering process of these ingredients should take longer than the preparation process.
Crockpot meals are fantastic for anyone; particularly those individuals who are on the go or are away for several hours. You simply throw everything together, let simmer for several hours, come back and voila- you have yourself a meal!
What You Shall Need:
1 lb grass fed beef
2 chorizo sausages, I used ground.
1 onion, diced
1 tbsp minced garlic
1 15 ounce can tomato sauce
1 15 ounce can diced tomatoes
1 can of rotel ( tomatoes and green chilies)
2 chipotle peppers in adobo, finely chopped
2 tbsp chili powder
1 tbsp cumin
Salt and pepper, to taste
What You Shall Do:
Brown meat in skillet, drain and toss in crockpot
In same skillet add onions and garlic and cook just enough till it becomes fragrant and the onions begin to change color. Only a minute or so.
Toss remaining ingredients in the crockpot, stir together.
Cook on low for 6-8 hours or high 4-6 hours.
Top with any or all of the following: avocado, cilantro, scallions or even a dollop of sour cream.
