Pad Thai Salad

What You Shall Need:

1 c cooked chicken

1 c cabbage

2 c mixed greens

1/2 bell pepper, sliced

1/2 c bean sprouts

1/4 c chopped nuts, your choice.

2 green onions (chopped)

2 chili peppers (diced)

1 egg, lightly beaten

Cooking fat ( preferably coconut oil or bacon fat)

For the Dressing:

Juice of 1/2 lime

1 clove garlic, finely minced

1/4 tsp incredibly minced ginger

2 tbs. almond butter

2 tbsp coconut milk

1 tbsp olive oil

Salt and pepper to taste

What You Shall Do

1. In a small bowl combine all the ingredients for the dressing. Mix well. Season to taste.

2. Melt cooking fat in a pan over medium heat and scramble egg until done to your liking.

3. In another bowl combine all the ingredients for the salad. Add chicken. Add dressing and enjoy!
